Where this cup comes from
Tarrazú is Costa Rica’s most celebrated coffee region — a stretch of the Los Santos highlands in the Talamanca mountains where almost every bean grows high enough to earn the country’s top “Strictly Hard Bean” grade and its own Protected Denomination of Origin. Thousands of small farmers deliver their cherries to a cooperative that runs, as they say locally, like a very big and well-calibrated clock, washing and drying each lot with remarkable precision. The result is bright and sweet — pineapple juice, blackberry, and almond.
