Where this cup comes from
It starts in the Amazonian Andes of northern Peru, where a cooperative that began in 2003 with thirty-five farmers now brings together nearly two hundred growers — many of them women who help lead it — farming the mountainsides between 1,600 and 1,800 metres. Their washed lots are clean and smooth to begin with.
Then the caffeine comes out, using water. No chemical solvents, just water, time, and patience. Something does change along the way: the brightest, most delicate notes soften. What’s left is the round, sweet middle of the cup — cocoa, a little citrus, brown sugar — and a coffee that tastes like a decision rather than a compromise.
