Where this cup comes from
Same beginning as our Decaf: the Amazonian Andes of northern Peru, a cooperative of nearly two hundred growers, washed lots from mountainsides between 1,600 and 1,800 metres, and caffeine taken out with water rather than chemical solvents.
The difference is the roast. Taken dark, the cup stops being about brightness altogether and becomes about depth — dark chocolate, toasted nuts, and a molasses sweetness underneath. It pulls a proper shot, and it’s the one to reach for if you’re making anything with milk in it.
